Chocolate Chip Cookie Bars

These chocolate chip cookie bars are soft, chewy, and filled with melty chocolate chips. They’re quick to make in just 30 minutes and offer the same homemade cookie magic with half the effort. Perfect for busy families, bake sales, or anytime you crave something sweet and comforting.

  • 1 cup (2 sticks) salted butter, melted
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups semi-sweet or dark chocolate chips
  • 1/2 cup toffee bits (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or foil, leaving an overhang.
  2. In a large bowl, mix melted butter with brown sugar and white sugar until combined and slightly cooled.
  3. Add eggs and vanilla extract. Stir until smooth.
  4. Gradually stir in flour, baking soda, and salt. Mix until just combined – do not overmix.
  5. Fold in chocolate chips until evenly distributed. Add toffee bits if using.
  6. Press the dough evenly into the prepared pan using a spatula or the back of a measuring cup.
  7. Bake for 22–25 minutes, until edges are golden and the center looks set but still soft.
  8. Let cool for at least 20 minutes before removing from pan and cutting into bars.
