  • 2 tsp. toasted sesame oil

For the stir-fry:

  • 1 Tbsp. neutral oil (canola or vegetable)
  • 1 lb. boneless, skinless chicken thighs or breasts, cut into 1/2” pieces
  • 2 medium heads broccoli, cut into bite-sized florets

For serving:

  • Cooked brown or white rice
  • Toasted sesame seeds

Instructions

  1. Make the sauce: In a small bowl, whisk together the chicken broth, soy sauce, garlic, honey, cornstarch, ginger, and sesame oil until the cornstarch is completely dissolved.
  2. Cook the chicken: Heat a large skillet or wok over high heat and add the neutral oil. When hot, add the chicken pieces and let them cook undisturbed for 1-2 minutes until they release easily from the pan. Stir and continue cooking until golden brown and just cooked through, about 5 minutes more. Transfer the chicken to a plate.
  3. Cook the broccoli: In the same skillet over medium-low heat, add the broccoli and pour in the sauce mixture. Cover the skillet and let the broccoli steam until crisp-tender, about 2-3 minutes.
  4. Combine everything: Uncover the skillet and return the chicken and any accumulated juices to the pan. Cook, stirring, until the sauce thickens and coats both the chicken and broccoli, about 1-2 minutes more.
  5. Serve: Divide rice among plates or bowls, spoon the chicken stir-fry over the rice, and sprinkle with toasted sesame seeds.
