4-Ingredient Cheesy Ground Beef and Potatoes (Ready in 30 Minutes)

  • 34 medium potatoes, thinly sliced
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • Salt and pepper to taste
  • 1 tablespoon Italian seasoning
  • 1 tablespoon olive oil
  • 1/2 cup milk (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat and set aside.
  3. In the same skillet, add olive oil and sauté onions and bell peppers until softened.
  4. Layer the sliced potatoes in a greased 9×13 inch baking dish.
  5. Spread the cooked ground beef over the potatoes.
  6. Spoon the sautéed onions and bell peppers evenly over the beef layer.
  7. Mix the cream of mushroom soup with milk (if using) and Italian seasoning, then pour over the casserole layers.
  8. Top with shredded cheddar cheese.
  9. Cover with aluminum foil and bake for 30 minutes.
  10. Remove foil and bake for an additional 15-20 minutes or until the potatoes are tender and the cheese is bubbly and golden brown.
