  • 1 cup frozen green peas, thawed
  • 14 oz can beef broth

  • ⅓ cup water
  • Reserved cooking liquid
  • 2 refrigerated 9-inch pie crusts

Instructions

  1. Season and Brown: Cut your sirloin into 1-inch cubes, sprinkle with salt and pepper. Brown in a Dutch oven over medium-high heat in batches.
  2. Slow Simmer: Add water to cover the browned beef and let simmer for 2-3 hours until tender.
  3. Finishing: Drain the meat, save the cooking liquid, and gently shred some of the larger pieces.
  4. Prep the Vegetables: Dice carrots and cube potatoes. Combine with beef broth and simmer until tender.
  5. Fold in Peas: Drain vegetables and fold in thawed peas.
  6. Craft Gravy: Mix all reserved cooking liquids. Thicken with cornstarch and water mixture while simmering, stirring continuously.
  7. Assemble the Pie: Preheat oven to 350°F. Line pie dish with one crust, fill with meat and veggie mixture, and pour gravy over.
  8. Top Crust: Cover with second crust, seal, and vent.
  9. Bake: Place pie on a baking sheet and bake for 25 minutes or until crust is golden brown.
  10. Rest: Let pie rest for 10-15 minutes before serving.
