  • 1 cup 1% milk
  • 1 large egg
  • 2 ripe bananas, sliced
  • Nonstick cooking spray

Instructions

  1. Preheat your waffle iron according to manufacturer’s instructions.
  2. In a large mixing bowl, sift together flour, baking powder, salt, and nutmeg.
  3. In a separate small bowl, beat the egg lightly, then add the milk and whisk together.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix; a few small lumps are fine.
  5. Lightly spray the preheated waffle iron with nonstick cooking spray.
  6. Pour approximately 2 tablespoons of waffle batter onto the center of the hot waffle iron.
  7. Quickly arrange 2 banana slices on top of the batter.
  8. Pour another 2 tablespoons of batter over the banana slices to cover them.
  9. Close the waffle iron and cook until golden brown and crispy, approximately 3-5 minutes.
  10. Carefully remove the waffle using a fork or tongs.
  11. Repeat steps 5-10 with the remaining batter and banana slices.
  12. Serve hot with your favorite toppings.
